The Three Temperature Phases Explained

Commercial freeze drying always follows the same three phases. The temperatures below are the practical operating ranges — the exact setpoint depends on the product's eutectic / glass transition temperature.

1. Freezing

Shelf: -40°C to -50°C
Product reaches: -30°C to -50°C
Pressure: atmospheric

The product is frozen solid before vacuum is pulled. Rate matters: fast freezing produces small ice crystals (smoother texture, faster primary drying); slow freezing produces larger crystals (better channels for vapor escape). Most production cycles freeze between -30°C and -50°C depending on the product's eutectic point — you want to stay at least 5°C below it to avoid melt-back during primary drying.

2. Primary Drying (Sublimation)

Shelf: -20°C to +20°C
Condenser: ≤ -50°C
Pressure: 0.05 – 0.3 mbar

This is where 85–90% of the moisture leaves the product. Under deep vacuum, ice sublimates directly to vapor without going liquid. The shelf temperature is ramped carefully — too high and the product collapses (melt-back), too low and the cycle takes twice as long. The condenser must always stay colder than the product to pull vapor off.

3. Secondary Drying (Desorption)
