How to read this table: “Yield” is how many kilos of fresh input are needed to produce 1 kg of freeze-dried output (a 10:1 yield means 10 kg of fresh strawberries becomes 1 kg of dried). “Input / kg FD” is the raw-material cost per kilo of finished product. “Margin” is the gross margin before energy, labour, packaging and overhead — a first-order approximation of the economics, not a full P&L. Actual cycle times, loading capacities and yields vary by product size, moisture, and machine configuration; your WAVE engineer will dial these in for your specific recipe.
Methodology
Where do the fresh prices come from?
Fresh wholesale benchmarks track the EU Commission’s DG-AGRI market dashboards and national wholesale market reports (Rungis, Mercabarna, Hamburg Grossmarkt). We use the weekly median across major producing regions, normalised to EUR per kilogram.
Where do the freeze-dried wholesale prices come from?
B2B freeze-dried prices are less transparent than fresh produce. We triangulate from specialty wholesale distributors, Alibaba reference listings, and figures shared privately with the WAVE sales team. These are order-of-magnitude reference numbers, not binding quotes — your actual price depends on volume, packaging, brand, and certification.
Why show margin before energy and labour?
Energy, labour, depreciation and packaging vary enormously by location, machine size, and batch configuration. We deliberately show raw gross margin so the table stays comparable across regions. Run the full P&L in the ROI calculator once you’ve shortlisted a material.
How often does the table update?
Every Monday at 08:00 CET. The “trend” arrows show the week-over-week move in the freeze-dried wholesale price. First publication has no prior baseline, so every row reads flat — real trend signal starts next week.
