Vacuum extraction · WAVE Brew

WAVE Brew – Coffee. Water.
Vacuum.

WAVE Brew connects your freeze dryer to a new way of extracting. Add coffee and water, lower the pressure – and the liquid boils at room temperature.

Fill, pull a vacuum and collect the coffee. Rotate the system and explore each step.

From coffee to extract

Three steps. One closed process.

  1. 01

    Fill

Open Brew, add ground coffee to the filter basket and pour in water. Close the lid using the six screw clamps.

  2. 02

    Extract under vacuum

The pump lowers the pressure through the FD 440. The liquid starts boiling at room temperature while the freeze dryer’s cold trap collects the water vapour.

  3. 03

    Collect the extract

Isolate the vacuum lines and equalise the pressure. Open the bottom outlet and collect the coffee in the receiving vessel.

Low pressure. Controlled extraction.

Under vacuum, the boiling point of water drops. The liquid starts moving at room temperature. Since evaporation also cools it, the integrated heater offsets this heat loss to keep the extraction running.

Water vapour travels through the stainless-steel line to the freeze dryer, where it is captured by the cold trap.

How the components work together

More from your freeze dryer.

Brew adds vacuum extraction to a WAVE system. In this example, four components each play a specific role.

01

WAVE Brew

Extraction happens here. A stainless-steel vessel, filter basket, transparent lid and bottom outlet form the process unit.

02

FD 440

The cold trap collects the water vapour. Vacuum lines from Brew and the pump connect at the back of the machine.

03

WaveDry35

The vacuum pump evacuates the connected system. Flexible stainless-steel lines and separate isolation valves connect the equipment.

CO₂ connection

The second KF25 port on Brew connects to the CO₂ supply. The animation shows pressure equalisation before dispensing.

One system. Many recipes.

Think beyond coffee.

Coffee

Concentrates for drinks, recipe development and subsequent freeze drying into instant coffee.

Tea & botanicals

Extracts from tea, herbs and plant ingredients for new products and experimental batches.

Fruits & berries

Liquid fruit extracts as a starting point for concentrates or freeze-dried ingredients.

TDS is the proportion of total dissolved solids. Results depend on the raw material, water ratio and process settings.

Every perspective.

Good to know.

Why does coffee boil at room temperature?

The boiling point depends on pressure. Lowering the pressure sufficiently allows water to boil at room temperature. WAVE Brew uses this effect for extraction.

What does the freeze dryer do?

Its cold trap collects the water vapour from Brew. The vacuum pump creates the low pressure in the connected system. This example uses an FD 440 and a WaveDry35.

Why does Brew need a heater?

Evaporation removes heat from the liquid. The integrated heater, with up to 2 kW of power, offsets this cooling so extraction can continue.

Does the Brew price include the complete system?

The starting price covers WAVE Brew. The freeze dryer, vacuum pump, CO₂ equipment and required connections are specified separately in a quote for your setup.

Can I freeze-dry the extract afterwards?

Yes. The collected extract can then be processed in the freeze dryer, for example into instant coffee or botanical extract powders.

What would you like to extract?

Tell us about your ingredients and your freeze dryer. We’ll put together the right Brew setup for you.
